With summer coming to an end I would like to finish off this summer with a drink to share. The hubby and I have been known to bust out our famous Spiked Watermelon on special occasions. Many have asked for the recipe and we feel we have held on to it long enough. So here you go! I hope your next camping trip, graduation or birthday party is just a little bit better with your own spiked melon.
Start with a ripe watermelon the size of your choice. Place your watermelon upright in an ice or beer bucket. Using a sharp knife cut a 4-5″ circle pointing the knife inward. Pop the top off then using a spoon dig out a “cylindrical” hole about 2/3rds of the way down leaving plenty of watermelon around the edges (the more the better)!
Now to top it off! The secret is to use very fruity booze as your base – I recommend using Pucker, any flavor will do, this should make up about 75% of your “filling”. The next 20% or so should be comprised of stronger fruity alcohol such as Malibu, Hypnotiq, and other flavored Vodkas. For the last splash add your “kicker” I like using Bacardi 151.
Now we wait….Put your top back on and let it chill. If you’re in a pinch I’ve popped em in the freezer for 4 hours but my preferred method is in the fridge overnight.
To serve, simply pop the top, toss in a handful of straws & sip, sip, pass! The 2nd best part is cutting up what’s left & munching on the fruit!
